Our organist plays for one priest after the consecration until the Pater Noster. He does not do it for our other priest. It is an issue of preference for them.
If you ask me, I don’t care for it either. I like to hear nothing but a pin drop durring the consecration/canon.
There is irony though. The priest that enjoys the organ background of the canon insists on wearing a microphone and having the canon outloud. The organ causes him to back off.
