In chessy news, the players set to play in all the events of the Grand Chess Tour were identified Fabiano Caruana, Wesley So, Ian Nepomniachtchi, Maxime Vachier-Lagrave, Gukesh D, Praggnanandhaa R, Nodirbek Abdusattorov, Anish, Giri, and Alireza “Puer” Firouzja.  The first event starts on 6 May in Warsaw, Poland.  I didn’t see Magnus in there.

Also, in chessy news… this is pretty cool and it gives older guys some encouragement… five time world chamo Vishy Anand defeated one of the 2024 candidates, the guy who is taking Carlsen’s slot, Nijat Abasov (2641) of Azerbajian.  With that win, Anand returns to the world top 10 in the live ratings. (I have a widget with that on the sidebar of this blog).  The game was part of the German Bundesliga.  HERE

Today with the way “Big Tech” is openly hostile to customers like us, why – other than habit or false convenience – anyone continues to use Google, Zoom, Dropbox, Office365, or Apple software services to run a team or business.  SaaS = expensive.

Each of these companies supports really horrible social policies, they throw folks off their system if they support the “wrong” causes, they use our data for training their AI stomping on our privacy. The lists goes on and on.

I haven’t been doing much cooking.  As a matter of fact, right now I’m down to a single meal a day.  Friday night I dumped some frozen mixed vegetables in to a pot of broth and added some left over chopped salad from one of those pre-washed bags you can often get BOGO at the grocer.  A little parmigiano and – ecco –sort of minstrone.  Sometimes its scrambled eggs or a piece of sausage and kimchi.

However, I did recently have to make a little room in the freezer and decided to use a marinated pork loin.  What to do?

First, I gave it some color with a little sizzle in a dutch oven.

Chop some onion.  And put them into the pan for some color also.

Add chunks of apples and juniper berries and put the loin back in.

Now… sour Kraut.  This is the company that makes the really good kimchi I’ve been eating a lot of.  Time to try it out.

A spash of a dry white wine.  Sauvignon blanc.

Cover and cook for a while.

This would have been a great meal for cold wintery day, though it isn’t particularly cold where I am these days.

My comments on this.  Yum and yum.   There was sweet and sour and tangy and soft and crunchy and savory and the occasional blast from a juniper berry. It hit the spot.

So easy.  I have enough for at least one more meal, probably two, but I think I’ll take the left over over to my mom.  I ask your prayers for her, too.  Thanks.

    Your recipe is very similar to a Penn Dutch New Year’s Day tradition of pork, sourkraut, and apples.

    Father Z., I always share your recipes with my Children. We all cook. I showed my wife, who has the same bag of sour kraut in the fridge. Our Latin Mass is about a half hour away. There is a store, Karl’s Sausage House, that according to my Wife has the best sour kraut she has ever eaten. Our Church has a daily 7 AM Latin Mass. Fringe benefit is she can buy a couple of pints of sour kraut.

If you’re ever around, check out little Italy in Murray Hill, West Side Market, the pieroghi lady, Devitis Italian deli in Akron, and wash it all down with libations from Thirsty Dog or Great Lakes Brewing

    Old style sauerkraut-making is a wonderful Slavic tradition my family has kept going for generations. I make dill kraut, myself. Wonderful to see you also enjoy this leafy treat!

    Billy should be happy he got a charitable thrashing from Madrid.

    As much as I don’t agree with the Dimond brothers, I have to admit Peter is an ace in destroying Protestant theology. Billy would have been metaphorically carried away on a stretcher if he called them.

    Thanks for asking. When you use one of my links, Amazon “remembers” how you entered the site to shop. After that, during that shopping session, I will receive a small percentage of the sales from whatever you purchase. I can’t see what people buy. If you stop shopping, the session ends. If you need to start shopping again, again use one of my links to get yourself going and the process starts up once more.

    This really helps. The percentage I get is small, but it adds up if enough people do.

    You may be interested in my menu for this evening, which involved remote preparation.

    Tonight was pork chops, which I’ve made before, as follows:

    1. Center cut pork chops, sliced at least 1-1/2″ thick.
    2. Brine in heavily salted water, with rosemary, pepper and onion powder. This for 1-2 days.
    3. Next pour out the brine, and keep the chops in the fridge, so their surface can dry out. This for a couple of days (in my case, it was longer, due to other demands on my time, and not wanting to have pork chops on a Friday in Lent!).
    4. I like reverse-searing my meat: so I popped the chops into the oven at 160 degrees for an hour or so, till they got up to about 90 degrees. Meanwhile, I prepared…
    5. An antipasto of assorted meats, cheeses and tasty things, and…
    6. A side dish of thin-sliced onions and apples, which I sauteed in butter, with salt, pepper and sage. I get the onions tender and the apples still a little crispy, and these go in the onion to keep warm. The chops came out to wait for the broiler to fire up. After the antipasto (which I enjoyed with my own version of the martini)…
    7. The chops go under the broiler, to get some color. I am using a remote meat sensor, which went a bit crazy, the chops went from 95 to 130 degrees almost instantaneously! Not my goal! Out they came, to rest a bit, with rosemary and butter added…
    8. On the table was the chops, apples and onions, and — kimchi! It was an afterthought, but it worked! Also, a dry rose which also worked.

    I don’t know the word Alizeram, unless it’s a very obscure alternative for Carthago. I suspect strongly that it isn’t. Care to enlighten me? I hate missing the joke.

Post: Alireza Firouzja is a youngish chess player who behaved boorishly in cobbling up a couple 11th hour tournaments to farm some rating points and edge out on of the other players who had earned a spot in the Candidates Tournament (the winner of which plays against Ding Liren for the World Championship title… whatever that means without it involving Magnus Carlsen).
