Supper: smoky and sweet and bitter and fishy and orangy and peppery

Supper. I had no interest in cooking, given the dreadful day we have had. However, I forced myself to look around and get creative with ingredients on hand.

I started by cutting the zest from an orange and chopping it.

Into a small sauce pan with a clove of garlic and cream to reduce

A reader in Alaska sent me, quite a while ago, a jar of smoked salmon.

So, since it is Friday and I am avoiding meat…

I blended a shot of Grand Marnier into the cream and orange zest and then stirred in elicoidali.

Elicoidali with smoked salmon and orange cream. Freshly ground pepper.

Smoky and sweet and bitter and fishy and orangy and peppery.

Green salad with vinegrette to follow.

Different, easy, fast, with stuff sitting around.

Now that I have done this once, I think I can do it better the next time.

    That’s what I call a MacGyver Dinner: I have x, y, and z ingredients on hand, and the question: how can I make dinner out of them?

    Only, your MacGyver Cuisine out-macgyvers mine. In my kitchen, Sriracha sauce covers a multitude of sins.

    It’s cheese and crackers and a glass of red wine for me. And now for the entertainment – “The Scarlet and the Black” with Gregory Peck.

    Some frozen vegetables and shrimp sauteed in olive oil with Tabasco, black pepper, and Tony Chachere’s. Over rice. Wine. Not bad for February in a climate colder than the one I miss.

    That looks (and probably tasted) delicious. Salmon with pasta sounds so good, most especially with orange peel and pepper. But, Fr., just what is elicoidali?

    Reminds me that there was a restaurant in Rome on an out of the way street between the Trevi and the Quirinale Palace whose specialty was an orange sauce for pasta.

    Fr. Z, your dinner looks tasty. Next time you make it, could you give us some proportions, for less experienced cooks to try?
    It was a meatless Friday here, as well. I took two frozen tilapia fillets, and seasoned them with ground mustard, cayenne pepper (just a smidge), black pepper, salt, powdered onion and garlic. Came out nicely with a squeeze of lemon. A baked potato, green salad, and a nice California chardonnay rounded out the meal.

    Oooo, your pasta (and the ingredients that went into it) looks very yummy, Father Z! Also like the pasta bowl that it’s in-looks very ‘Roman’.
    Last night I had some twisty pasta (name escapes me at present) with corn and tomato sauce. Had a piece of flat bread (the kind you put burritos and soft tacos in) and a pile of small pretzels. Had ice tea-not a wine drinker.
    A very quick, thrown-together meatless meal late on a Friday night.

    I thought Fridays were for penance.
    This looks like gourmet Fish Friday to me.
    It looks yummy.
    I tease my husband because he LOVES fish.
    Friday is no penance for him.
    He actually looks forward to Fridays.
    Me, I love a well cooked steak.
    I think next Friday I’ll make steak for him and fish for me. (kidding)

    One is to abstain from meat. That doesn’t necessarily mean one must eat fish.
