Yesterday, I thanked the reader who sent the filleting knife.  I got a nice note in return, catching up on news of people we know in common.  However, the very intelligent and kind reader finished the note this way:

Tomorrow (Friday) Collatura and fresh angel hair

All’amatriciana! So good. I wrote back:

Thanks. Macerate finely diced and then mashed garlic in the colatura for a few minutes. Have fresh Italian parsley, chopped at the last moment with close chops with a very sharp knife. Don’t overcook the angel hair. Have a bowl of ice water to stop the cooking and to chill the pasta. Serve the dish cold. I use a salad spinner to get rid of excess water. If the spinner has big holes in the spinner part, line with paper towels. A grind of fresh pepper is good. A little hot pepperoncino or cayenne is fun.

Enjoy! I really like the colatura. UMAMI BOMB! And the ancient Romans would have loved it. Just like garum!

In chessy news, the battle is engaged in Bucharest.  Fabi and Gukesh are tied for first.  However, yesterday in Round 2 my guy Wesley So got into a bad position against Fabiano so much so that, in the post-game interview, he said he had considered resigning several times.  But Wesley kept going.  A lesson for us all.  He managed to snatch a draw from Fabi, who got into time trouble and made mistakes.  Round 3 today is underway as I type.

  6. Sursum: The affiliate benefit for me lasts as long as the shopping session you begin using my link. If there is doubt, clear the cart and then reenter amazon with my link and start again. That’s what I do if I am interrupted.
