I have a recipe for Pasta alla Norcia – orecchiette with a heavy cream-based sauce containing cremini and a homemade sausage after the style they have there – no fennel, just garlic, rosemary and nutmeg. A fabulous dish – have you ever encountered this one?

Noiseblocking earbuds are the best kind. Unless, of course, you need to hear if anyone calls for you, or spy on people by only pretending to listen to music while actually listening to them. But for things like chilling out while in transit, especially noisy transit, they’re a must if you want to listen to anything.
When you write:- “There is a priest monk from Norcia on board, too! Nice to see him. They are great. I had some of their beer when I visited the Domus Australia. See that post. Incredible beer.” Are you really meaning “Norcia” or “New Norcia”, Father?
I only ask because you mention this in connection with Domus Australia which is, of course, Australia House in Rome. New Norcia is in my home State of Western Australia and New Norcia beer is only obtainable at the New Norcia Hotel which is owned by the Benedictines of New Norcia. But the beer may also be obtainable at Domus Australia in Rome. It is a place I intended visiting when I was last in Rome (January of this year) but I didn’t manage to do so.

Beer is kinda delicate, even in this modern world. It would be a lot cheaper to drink Italian Norcia beer, and wouldn’t put the poor Australian beer through the rigors of getting shipped around. So it’s probably a good thing that local beer trumps patriotic beer at Domus Australia.
